Ingredients
Scale
- 8 oz (226 g) medium shrimp, peeled and deveined
- 1 French baguette, ends trimmed and cut into ⅓-inch slices
- ⅓ cup (80 ml) mayonnaise
- ¼ cup (60 ml) sour cream
- ¼ cup mozzarella cheese, shredded
- 2 tbsps Parmesan cheese, freshly grated
- 3 cloves garlic, minced
- 2 tbsps parsley leaves, chopped fresh
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- ½ tsp onion powder
- ¼ tsp dried thyme
- ¼ tsp dried oregano
- Kosher salt, to taste
- Black pepper, freshly ground, to taste
Instructions
- Preparation: Preheat oven to 400°F (200°C) and lightly coat a baking sheet with olive oil or nonstick spray.
- Roasting Shrimp: Spread shrimp in a single layer, drizzle with olive oil, sprinkle minced garlic, and season with salt and black pepper. Roast for 6-8 minutes until pink and firm.
- Creating Filling: Dice cooled shrimp and combine with mayonnaise, sour cream, mozzarella cheese, Parmesan cheese, onion powder, dried thyme, dried oregano, and additional seasoning to create a creamy mixture.
- Assembling Toast: Arrange baguette slices on the same baking sheet, spread shrimp mixture evenly across each slice, and liberally dust with Cajun seasoning.
- Final Baking: Return to oven and bake 6-8 minutes until cheese melts and edges turn golden brown.
- Serving: Remove from oven, let cool briefly, garnish with freshly chopped parsley, and serve immediately while warm.
Notes
- Shrimp Selection: Choose fresh, medium-sized shrimp for best texture and easier dicing, avoiding frozen or previously cooked varieties.
- Cheese Mixing Tip: Grate cheeses fresh for maximum melting potential and richer flavor profile compared to pre-shredded options.
- Spice Control: Adjust Cajun seasoning quantity based on heat preference; start conservatively and taste before final application.
- Toast Timing: Watch baguette slices closely during final baking to prevent burning, aiming for golden brown edges with perfectly melted cheese.
