Description

Homemade marbled coffee cake offers a delightful swirl of chocolate and vanilla flavors with rich, balanced textures. Coffee enthusiasts and dessert lovers will savor this elegant treat that pairs perfectly with afternoon tea or morning coffee.

Ingredients

Scale
  • 2 ¼ cups (280 g) all-purpose flour
  • 2 large eggs
  • 1 cup (240 ml) sour cream
  • ¾ cup (150 g) granulated sugar
  • ½ cup (113 g) unsalted butter
  • ½ cup (50 g) chopped pecans
  • ¼ cup (50 g) brown sugar
  • 1 cup (120 g) powdered sugar
  • 2 tsps baking powder
  • 2 tbsps cocoa powder
  • 2 tbsps whole milk
  • 2 tbsps unsalted butter
  • 3 tbsps all-purpose flour
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ½ tsp salt

Instructions

  1. Prepare Station: Align oven rack to middle position and heat to 350°F. Line 9×13-inch baking pan with parchment paper and lightly spray with cooking spray.
  2. Craft Streusel: Mix flour, chopped walnuts, dark brown sugar, ground cinnamon, and kosher salt in a bowl. Cut chilled butter into small cubes and work into dry ingredients using fingertips until crumbly. Refrigerate streusel mixture.
  3. Create Cake Batter: Whisk flour, granulated sugar, baking powder, and salt in large mixing bowl. Incorporate eggs, vegetable oil, whole milk, and vanilla extract. Blend with electric mixer until smooth and lump-free.
  4. Layer Cake: Spread half the batter evenly in prepared pan. Sprinkle half the chilled streusel over first batter layer. Gently pour remaining batter, ensuring even coverage. Top with remaining streusel across entire surface.
  5. Bake and Cool: Place pan in preheated oven and bake 35-40 minutes until golden brown and toothpick inserted comes out clean. Remove and let cool in pan for 15 minutes. Transfer to wire rack using parchment paper.
  6. Finish and Serve: Whisk powdered sugar and milk to create smooth glaze. Once cake completely cools, drizzle glaze over top. Allow glaze to set for 10 minutes, then slice into squares and serve.

Notes

  • Chill Streusel Beforehand: Refrigerating the streusel mixture ensures a crisp, crumbly texture and prevents butter from melting too quickly during baking.
  • Even Batter Distribution: Spread each cake batter layer carefully to create uniform marbling and consistent texture throughout the cake.
  • Toothpick Test Matters: Always check cake doneness by inserting a toothpick into the center; it should come out clean with minimal to no batter residue.
  • Cooling is Crucial: Allow the cake to cool completely before glazing to prevent the sugar from becoming runny and ensure a beautiful, set finish.
