Description

Mexican-inspired gluten free lasagna delivers robust flavors and hearty comfort in one pan. Layered corn tortillas, spicy ground beef, and melted cheese create a satisfying meal you’ll crave again and again.

Ingredients

Scale
  • 1 lb (0.45 kg) ground Italian sausage
  • 9 oz (255 g) gluten free lasagna noodles
  • 15 oz (425 g) full fat ricotta cheese
  • 5 cups (454 g) grated mozzarella cheese
  • 1 cup (100 g) grated parmesan cheese
  • 2.5 cups finely diced onion
  • 2 cloves minced garlic
  • 56 oz (1.6 kg) blended fire roasted tomatoes
  • 2 eggs
  • 1 tbsp Italian seasoning
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 12 tsp chopped fresh parsley or sprigs of fresh basil (garnish)

Instructions

  1. Meat Preparation: Brown Italian sausage in a large saucepan over medium-high heat until completely cooked, then transfer to a separate dish.
  2. Aromatic Foundation: In the same pan, sauté diced onions and minced garlic until translucent and lightly caramelized.
  3. Sauce Development: Add Italian seasoning, fire-roasted tomatoes, and reserved sausage to create a rich sauce. Simmer for 10 minutes, seasoning with sea salt and black pepper.
  4. Cheese Mixture: Blend ricotta cheese, eggs, and parmesan in a bowl until smooth and well-incorporated.
  5. Layer Assembly: Prepare a 9×13 inch baking dish by lightly coating the bottom with sauce. Arrange the first layer of gluten-free lasagna noodles, breaking to fit if necessary.
  6. First Cheese Layer: Spread half the ricotta mixture evenly over noodles, then generously sprinkle mozzarella and parmesan cheese. Pour sauce over the cheese layer.
  7. Subsequent Layering: Repeat the previous step with remaining noodles, ricotta mixture, mozzarella, and parmesan, ensuring complete coverage with sauce.
  8. Baking Preparation: Cover the dish tightly with oven-proof lid or greased aluminum foil, then bake at 375°F (190°C) for 40-45 minutes until edges bubble and noodles become tender.
  9. Final Browning: Remove cover and bake an additional 10-15 minutes until the top achieves a golden-brown color.
  10. Resting and Serving: Allow lasagna to rest for 10 minutes on a wire rack, enabling layers to set. Optionally garnish with fresh chopped parsley or basil before slicing and serving.

Notes

  • Noodle Selection: Choose certified gluten-free lasagna noodles to ensure safe consumption for those with gluten sensitivities.
  • Cheese Mixing Technique: Thoroughly blend ricotta mixture to prevent lumpy texture and ensure even distribution of ingredients.
  • Layering Strategy: Break noodles strategically to create complete coverage without gaps, maximizing flavor in every bite.
  • Resting Importance: Allow lasagna to rest exactly 10 minutes after baking to stabilize layers and enhance serving presentation.
