Description

Spicy-sweet blackberry cobbler delivers keto magic without sugar guilt. Buttery almond flour crust cradles juicy berries, tempting health-conscious dessert lovers with rich flavors and minimal carbohydrates you’ll savor to the last delicious bite.

Ingredients

Scale

Fruits:

  • 450g / 1 lb Blackberries

Dry Ingredients:

  • 100g / 1 cup Blanched almond flour
  • 50g / ¼ cup Monk Fruit Allulose Blend (or 37g / 3 tablespoons for less sweetness)
  • ½ teaspoon Baking powder
  • ¼ teaspoon Sea salt
  • 2 tablespoons Unflavoured gelatin powder

Wet and Sweetening Ingredients:

  • 67g / ⅓ cup Monk Fruit Allulose Blend (or 50g / ¼ cup for less sweetness)
  • 2 tablespoons Lemon juice
  • 60ml / ¼ cup Coconut oil (or butter/ghee if not dairy-free)
  • ½ teaspoon Vanilla extract

Instructions

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and position the rack in the center of the oven.
  2. Combine fresh blackberries with freshly squeezed lemon juice and selected sweetener in a spacious mixing bowl, ensuring each berry is lightly coated.
  3. Evenly sprinkle two tablespoons of gelatin over the blackberry mixture, gently stirring after each tablespoon to promote even distribution and help the filling thicken.
  4. Transfer the blackberry mixture into an 8×8 inch (20×20 centimeter) glass or non-stick baking dish, spreading it uniformly across the bottom.
  5. Melt coconut oil using either a microwave or stovetop method, removing from heat once completely liquefied.
  6. Incorporate vanilla extract into the melted coconut oil, creating a fragrant base for the topping.
  7. Add almond flour, sweetener, baking powder, and sea salt to the oil mixture, stirring until a crumbly yet slightly moist dough forms.
  8. Delicately distribute the crumbly topping over the blackberry filling, allowing some berries to peek through the gaps for an appealing presentation.
  9. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping turns a beautiful golden brown.
  10. Remove from the oven and allow the cobbler to rest for at least 10 minutes, which helps set the filling and enhances the overall texture.
  11. Serve warm for a softer consistency or let cool completely for a firmer dessert experience.

Notes

  • Grab ripe, juicy blackberries for the most intense flavor and vibrant color in your cobbler.
  • Slowly dust gelatin over the fruit mixture to ensure smooth, lump-free consistency without clumping.
  • Tweak sugar levels after tasting the filling, accounting for natural berry tartness and personal sweetness preferences.
  • Create strategic openings in the crumbly topping, allowing bubbling juices to peek through and create a gorgeous rustic look.
  • Give the cobbler a brief resting period after baking, letting the filling settle and making slicing a breeze.
