  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons butter for cheese sauce
  • 2 tablespoons all-purpose flour
  • 1 cup (240 ml) whole milk
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon white pepper

Instructions

  1. Remove roast beef from refrigerator and allow to reach room temperature.
  2. Combine beef stock and Worcestershire sauce in a medium saucepan, heating gently without boiling.
  3. Create a roux by melting butter in a separate saucepan over low heat, then whisk in flour and cook for 3 minutes until golden and fragrant.
  4. Slowly incorporate hot milk into the roux, whisking continuously to create a smooth, velvety base.
  5. Season the sauce with salt, black pepper, mustard powder, and a pinch of nutmeg, then gradually fold in shredded cheddar cheese until completely melted and glossy.
  6. Prepare Arby’s Sauce according to package instructions or personal preference.
  7. Preheat oven to 350°F (175°C) and position rack in the middle.
  8. Arrange slider roll bottoms in a single layer within a 9×13-inch (23×33 centimeters) baking dish.
  9. Spread a thin layer of Arby’s Sauce on each roll bottom, ensuring even coverage.
  10. Submerge roast beef slices briefly in the simmering beef stock mixture, draining immediately to maintain moisture and tenderness.
  11. Layer drained roast beef slices evenly across prepared roll bottoms.
  12. Pour warm cheese sauce generously over the roast beef, ensuring complete coverage.
  13. Carefully place roll tops back onto the assembled sliders.
  14. Brush slider tops with melted butter and sprinkle with everything bagel seasoning for added crunch and flavor.
  15. Cover the baking dish first with parchment paper, then tightly with aluminum foil.
  16. Bake covered for 15 minutes, then remove foil and parchment.
  17. Continue baking uncovered for an additional 10 minutes until edges turn golden brown.
  18. Quickly broil for 1-2 minutes to create a crispy, caramelized top.
